1/2 C uncooked wild rice
3/4 C celery, diced
1 C diced carrots
1 C diced onion
4-5 cloves minced garlic
1 small can sliced mushrooms
1 can peas
1 1/2 tsp. pepper
1 Tbl. Italian seasoning
1 1/2 lb. chicken breast (or 3 cans chicken)
1-2 bay leaves
5 C broth
1 C water

White sauce:
5 Tbl. butter
1/2 C flour
2 C WHOLE milk (or 1 C evaporated milk and 1 C water)

Directions:
Directions:
Combine all ingredients in large crock pot and cook on high 4 hours.

At 3 1/2 hours, remove chicken breast and shred. Return to crock pot.

White sauce:
Melt butter, add flour until smooth. Add milk all at once. Continue stirring until thik.

Add white sauce to soup. Season with salt and pepper to taste.

Let stand 5 minutes. Serve.
