2 cups flour
1 cup vegetable oil
cup sugar
2 large eggs
1 tsp vanilla
tsp salt
2 medium apples, peeled and cubed
1 cup dark brown sugar (not packed)
1 cup chopped walnuts (optional)
1 Tbsp cinammon
tsp baking powder
baking soda

Preheat oven to 350 and lightly grease a 9 inch cake pan or bundt pan. In a medium bowl, mix together the eggs and oil. Add the cinnamon, both sugars and villa and mix until combined. Add the flour, salt, baking soda and baking powder, and mix until thoroughly incorporated. Fold in the apples and nuts and pour batter into prepared pan. Bake until a toothpick inserted in the center comes out clean, about 45 minutes. Let cool for 15 minutes before removing from pan. Optional: Dust with powdered sugar and serve. Enjoy!
