3 8 oz packages cream cheese
1 can pie filling (I like Comstock’s cherry)
5 eggs
1-1/4 c sugar
3 T vanilla
1 c sour cream
Foil cupcake papers

Directions:
Directions:
Preheat oven to 300º.

Blend cream cheese with 1 c sugar in a mixer. Add eggs and vanilla and beat 3-4 minutes till smooth.

Fill cupcake papers 3/4 full and bake for 35-40 minutes. The foil liners are strong enough to keep their shape if you cook them on a cookie sheet. Remove from oven and cool for 5 minutes.

While cooling, mix sour cream and remaining 1/4 c sugar and the vanilla in small bowl.

Using a teaspoon, put a dollop of the sour cream mixture on top of the cupcakes along with a cherry. Place back in oven for 5 minutes.

Refrigerate.
