1 cup Minute Rice
1 pound ground beef
1 egg slightly beaten
2 teaspoons grated onion
2 teaspoons salt
⅛ teaspoon marjoram
Dash pepper
2 ˝ Cups tomato juice
˝ teaspoon sugar(we never included this)

Directions:
Directions:
Combine Minute RiceŠ with beef, egg, onion, salt, marjoram, pepper, and ˝ cup tomato juice. Mix lightly. Shape mixture into 18 balls and place in skillet. Add sugar to remaining 2 cups of tomato juice(we never did). Pour juice over meat balls in skillet. Bring mixture to boil. Reduce heat and simmer, covered, 15 minutes, basting occasionally Makes 6 servings, 3 meat balls each.

You can use two 8 oz cans tomato sauce mixed with ˝ cup of water in place of tomato juice.

This was one of Mom's go to recipes when she needed something quick and tasty. She actually found the recipe on the Minute Rice box. She guarded that original recipe cut from the box. I don't know why she just didn't copy it down on a recipe card.
