Ingredients:  
3 Lbs. Sweet Potatoes (cut small & mashed)
2 eggs
¾ cup brown sugar
½ cup melted butter
1 tsp cinnamon
1 tsp salt
Up to 1 cup of orange juice

Directions:
Directions:
Mash potatoes. Add eggs, ¼ c brown sugar, ¼ c melted butter, cinnamon & salt. If mix looks moist, don’t need much OJ.
Put in casserole dish and smooth out. Sprinkle brown sugar on top and add melted butter. Bake at 375 for 20 minutes.
