"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
FOR EACH TENDERLOIN:
¼ cup white sugar
½ tsp ground black pepper
¼ tsp ground thyme
¼ tsp allspice
¼ tsp red chili powder
1½ tsp salt

Directions:
Directions:
Rub meat with finely chopped garlic and sprinkle marinade on meat. Marinate for several hours, overnight is best. Turn meat and cover all sides wit marinade. Turn at least 3x. After meat is cooked, while still on grill, coat with a mixture of brown sugar and rum. Adding limejuice to the mixture can enhance the flavor of the meat. Cover meat while on the grill and let sit. I usually put 2 in a gallon baggie and shake and turn over intermittently. ENJOY
