3# pork or beef roast (or a combination of both)
1# dry pinto beans
2 T. chili powder
1 t. oregano
1 T. cumin seed
1 t. hot sauce
1 t. minced garlic
salt to taste

Tortilla Chips

Suggested Toppings:
chopped lettuce
chopped tomatoes
chopped avocados
chopped onion
cheddar cheese shredded
sour cream
hot sauce

1. Place roast in large pan or Instant Pot and cover with water
2. Add next 7 ingredients
3. Cook covered for 8 hours over low heat (or at least 80 minutes in instant pot)
4. Remove bone (if any) and fat and shred meat
5. Serve over tortilla chips that have been crumbled in individual plates
6. Add toppings on top of mixture

This recipe was given to us years ago by the Vasher family in Britton, MI. Our family requests this dish for special occasions and holidays. It is easiest to serve buffet style. Much of the preparation can be done ahead of time.
