1/2 onion diced
3 garlic cloves-chopped fine
3 poblanos-small dice
1/2 stick of butter
1/2 cup grits
1 cup heavy cream
1 cup chicken stock
5 ounces of ex-sharp cheddar cheese
5 ounces of jack cheese

Directions:
Directions:
Saute onion, garlic, Jalapenos, poblanos in butter until soft. Add cream and stock and bring to a simmer then stir in grits. cook for about 5 minutes and then stir in cheese.

I use the 5 minute quick grits, not instant grits. Also, I use pepper jack cheese so I don't have to roast jalapeņos. I do 3 medium poblanos. Roast the poblanos. After you roast them, you let them cool, peel the skin off and deseed them before you chop them up. .
