"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Carmel Mogan

50g Butter
150ml water
65g plain flour (sifted)
2 eggs beaten

Heat the butter and water gently in a saucepan, bring to the boil and remove from the heat.
Tip in all the flour and beat to a smooth paste with a wooden spoon so it forms a ball.
Leave to cool for a few minutes.
Then add in the beaten eggs a little bit at a time until the paste gets a glossy sheen to it.
Keep beating until it turns into a thick paste.
Place mixture with a spoon onto a baking sheet in the shape of a ring.

Bake at 200 celcius(400F) for 40-45 mins

Once cooked cut it through the middle horizontally so you have a top and bottom shaped ring
Let the ring cool down and then you can fill the middle with whatever filling you like(cream/custard) and you can put whatever topping you like(chocolate/icing)
