One medium eggplant
Salt
Olive oil
Italian bread crumbs
Canned spaghetti sauce (garlic herb variety)
Mozzarella slices
Grated parmesan

Directions:
Directions:
Wash eggplant. Slice horizontally about ¼ inch thick. Sprinkle each slice with salt and set aside for abt. 15 mns. Rinse and pat slices dry.

Heat the olive oil in a sauté pan. Press the eggplant slices in to bread crumbs to cover each side and sauté until golden brown. On a cookie sheet or baking pan layer the sautéed eggplant slices with 2 Tbsp. sauce, sliced cheese and then top with parmesan cheese ( 2-3 slices of eggplant per stack)
Bake on 350 for 15-20 mins.
