1 burdock root, sliced thinly (optional)
1 lg. onion, shopped
4 carrots, cut in thick matchsticks
¼ c. soaked and drained arame sea vegetable
1 T. ghee or canola oil
1 tsp. grated ginger
1 tsp. toasted sesame oil
1½ T. mirin or sake
1½ T. tamari
¼ c. water
¾ c. cold water
2 tsp.. kuzu

Directions:
Directions:
Saute the burdock root in ghee for about 5 minutes. Stir occasionally. Add the chopped onion. When it is translucent, add the carrots and the drained arame. Sprinkle the sesame oil over all. Pour in the mirin, tamari and water. Cover and simmer until carrots are tender. Do not stir. Stir in the cold water in which the kuzu has been dissolved. Let it thicken. It will do this rather quickly. Adjust seasoning and enjoy.
