Tortellini Soup Recipe

1 lb. Italian sausage
1 c. chopped onion
2-4 cloves garlic
5 c. beef broth (3 cans)
2-4 water
1 1-2 c. wine--red or white
1 28 oz. tomatoes, peeled and chopped
1 c. carrots, thinly sliced
2 T. basil
1-2 T. oregano
15 oz tomato sauce
1 c. zucchini, sliced
8 oz. tortellini, meat or cheese filled
3 T. parsley, fresh or dried
1-2 c. chopped other vegetables & spinach/ fresh basel

Brown sausage. Season with basil and oregano. Drain grease. Saute onion and garlic. Add broth, water and other liquids. Bring to boil, add carrots and then simmer for 30 minutes. Skim off fat. Add tortellini last with green pepper and zucchini.

Simmer 30 - 40 minutes, Sprinkle with Parmesan cheese before serving.
