1 pint of chicken livers
1 medium yellow onion
3 large eggs
4 T. olive oil
4 tsp. kosher salt
¼ tsp. ground black pepper

Directions:
Boil eggs in a saucepan with simmering water for 13 minutes. Cool under running water. Shell and quarter eggs.

Peel onion and roughly chop. Add two tablespoons olive oil and onion to a pan. Cook on medium-low heat stirring frequently for about 20 minutes or until mostly caramelized.

Rinse livers in a sieve and drain. Use a kitchen scissor or paring knife to remove connective tissues and any unsavory appearing lobes. Rough cut livers into 1 inch cubes. Saute with remaining olive oil over medium heat about 8 minutes or until interiors are no longer pink

Combine cooked livers, hard boiled eggs, caramelized onion, and seasoning in a food processor. Pulse-chop until blended, about 15 seconds. Do not over-puree.

Serve with crackers.
