19 ozs. Cream cheese (I usually use only 16 ozs.)
1 tsp. Cream of tartar
1 cup fine graham cracker crumbs
¼ cup melted butter
6 large eggs,separated (room temperature)
3 tbs. flour
½ tsp. Salt
1 pint sour cream (1 lb.)
1 tsp. vanilla extract
1¼ cups sugar

Melt butter, add graham cracker crumbs (reserve 1/4 cup for top - optional).

Add cream of tartar to egg whites and beat till fluffy; add 3 tbs. sugar and beat till stiff. In another bowl beat cheese till soft, mix. In 1¼ sugar, flour and salt; add egg yolks, one at a time. Add sour cream and vanilla. Fold in egg whites and pour into
a 9”x3½” spring form pan.

Bake at 325º for 1¼ hours, turn off oven and leave in oven for 30 minutes. Then remove and cool completely.
