2 T olive oil
1/4 C raisins
1 clove garlic
2 shallots or 1 medium onion
1/2-1 bunch kale
1 head cauliflower or pkg frozen cauliflower
1 C quinoa
1/8 C pistachios

Directions:
Directions:
- Prepare quinoa separately- 1c quinoa & 2 c water in rice cooker.
- Sauté shallots, garlic, and raisins in olive oil on med-high heat for 5 minutes in skillet.
- Add kale & cauliflower, lower heat and cover, stir occasionally until tender-about 10 min.
- Add pistachios & quinoa and serve!
