1 1/2 cup oil
1 1/2 cups sugar
6 eggs
7 cups oatmeal
2 Tbsp baking powder
1 1/2 tsp salt
3 cups milk
2 Tbsp vanilla
3 tsp cinnamon

Directions:
Directions:
Beat eggs. Add the sugar and oil to eggs and mix well. Stir in the baking powder, salt and oatmeal. Cover and let sit overnight in refrigerator. In the morning add the vanilla and cinnamon and mix until blended. Pour into a 9 x 13 pan. Bake at 325º until top is lightly browned and crisp and the center is firm. To serve scoop directly out of the baking pan.

*Good toppings to have available to sprinkle on top: Cinnamon sugar, raisins, brown sugar, chopped nuts

Several of our ladies enjoyed this for breakfast when it was served at the Maranatha Retreat while attending a Christian Womens Conference there. Everyone that tasted it asked the cooks for the recipe to bring home and share!
