6 c. thin sliced Kirby or pickling cucumbers (about 2 lbs.)
1 c. thin sliced onion
1½ c. white Vinegar
¾ c. sugar
4 garlic cloves sliced (optional)
1 tsp.. kosher salt
1½ tsp. mustard seeds
½ tsp. celery seeds
¼ tsp. freshly ground black pepper

Directions:

Layer cucumbers and onions in a medium glass bowl. Combine remaining ingredients in a small saucepan. Stir well and bring to a full boil. Cook for 1 minute. Pour over cucumber mixture. Let cool. Cover and chill at least 4 days. Yields: 7 cups. Pickles may be stored in the refrigerator for up to a month.
