4 small sweet potatoes- with peel on
1/2 cup old fashioned oats
1/4 cup flour
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup oil

Directions:
Directions:
Preheat oven to 400
Line a baking sheet with parchment paper
Using a fork, prick the sweet potatoes all around and place on prepared baking sheet
Cover well with foil and bake for 45-60 minutes, until a fork can be inserted easily

Meanwhile, combine the streusel ingredients in a bowl and mix with a fork until crumbs form
Remove the baked sweet potatoes from the oven and make a slit along the top of each potato
Using your fingers, pinch both ends together to open up the slit
Insert a fork into the slit and loosely mash the potatoes, while keeping the skin intact
Sprinkle the streusel topping evenly over the potatoes
Return the sweet potatoes to the oven, reduce the oven temperature to 350 and bake uncovered for 20 minutes
Serve warm

This can be made in advance and reheated in a tightly covered pan, in an oven or on a blech
