Ingredients:  
Oil
3 potatoes
3 carrots
3 leeks sauteed
2 teaspoons salt
7 1/2 cups water

Directions:
Directions:
Saute 3 leeks (white part) in oil, don't let them get brown
Add in vegetables and water and let cook for 1/2 hour
Take out the carrot and puree the soup
Mash carrot and garnish soup with it
Or you can garnish with parsley flakes
