1 can chickpeas, drained and rinsed
1 can artichoke hearts, drained, rinsed, and cut into strips
1 red bell pepper chopped
1/3 cup chopped kalamata olives
1/2 small red onion, chopped
1/2 cucumber, peeled and chopped
1/4 cup chopped parsley
2 tb lemon juice
2 tb olive oil
1 tb balsamic vinegar
salt and pepper

1. Throw chickpeas in bowl and smash. You don't want a paste just break up the chickpeas.
2. Fold in artichoke hearts, bell pepper, olives, onion, cucumber, parsley, lemon juice, olive oil, and vinegar. Add salt and pepper.

I let the red onion sit in the lemon juice while I prepped everything else to help cut back the bite.
