c. Louisiana-style hot sauce
2 tbs. Butter
2 tbs. blue cheese crumbles
tsp. celery salt
1 lb boneless skinless chicken breasts, cut into chunks
c. all-purpose flour
2 c. crushed cereal
Blue Cheese dressing for Serving

Directions:
Directions:
1) In a small saucepan over medium heat, combined hot sauce, butter, blue cheese, and celery salt. Cook, stirring frequently until butter and cheese are melted. Set aside to cool slightly.

2) Place flour in a shallow dish, hot sauce mixture in a second shallow dish, hot sauce mixture in a second shallow dish and cereal in a third shallow dish. Salt and pepper cereal to taste. Dust chicken pieces in flour, dip in hot sauce and roll in crushed cereal to coat.

3) Place chicken pieces on a baking sheet that has been generously sprayed with cooking spray. Generously spray tops with cooking spray. Bake in a 400F oven for 20 minutes or until internal temperature reaches 170F on an instant-read thermometer. Serve with blue cheese dressing, if desired.
