1 c. uncooked orzo
2 tsp. dried Italian herbs
4 tbs. olive oil, divided
2 cloves garlic, minced
1 c. grape tomatoes, sliced in half
1 lb. bag Collard Greens
1 large lemon, juiced
c. parmesan cheese, grated
Salt and Pepper to taste

Directions:
Directions:
Prepare orzo according to package directions. Return to pot, add Italian herbs and toss. Cover and set aside. In a separate large stock pot on medium heat, add 2 tablespoons olive oil, garlic, and tomatoes. Saute for 2-3 minutes and remove from pot. In the same pot, add remaining olive oil and greens and cook on medium heat, tossing to coat. Saute or 10 minutes, stirring occasionally. Add orzo, garlic, tomatoes and lemon juice. Stir and continue cooking for 5 minutes. Remove from heat, stir in Parmesan cheese and season with salt pepper.
