2 cups oatmeal
1 cup flour
1 cup brown sugar
1 teaspoon salt
3/4 cup shortening
1/4 teaspoon baking soda
1/4 cup boiling water

Directions:
Directions:
Preheat oven to 400º.

Combine dry ingredients and cut in shortening. Dissolve baking soda in the boiling water and add, continuing to mix with a knife. Mold with hands and shape into a long wedge or roll. Slice off and bake for 10 minutes.

Makes about 3 dozen.

We were introduced to oatcakes when visiting Nova Scotia in 2009. We found this recipe in a cookbook that Merle picked up at a used book sale at the library - Out of Old Nova Scotia Kitchens.
