1 cup flour
1/4 cup sugar
1 tsp baking powder
1/8 tsp salt
1/4 cup shortening
1/4 cup raisins
2-4 Tbsp milk

Directions:
Directions:
Combine flour, sugar, baking powder and salt.
Cut in shortening until crumbly with pieces the size of peas.
Add raisins (optional).
Add enough milk to hold batter together.
Flatten dough on floured surface to about 1/4 inch thick.
Cut out cakes in circles about 2 inches in size.
Cook on floured griddle (cast iron works well) over Low heat until browned and crusty on one side. Turn over and cook again.

Aunt Rene Clark almost always had these when we went to visit. We made them for Uncle Tom after Rene passed away but they were ‘almost as good as Rene’s’!
