Ingredients:  
Boil till tender:
12 chicken bouillon cubes (12 tsp)
3 quarts of water
1 T. parsley flakes
1 onion, chopped & sauted
1 large carrot grated
6-12 potatoes, peeled and cubed

Add:
1 quart half and half
Melt 2 cubes of butter and combine with 1/2 cup flour
Stir this into soup and add 3 cups grated cheddar cheese

Simmer until cheese is melted.
