3 cups hot mashed potatoes, seasoned to taste
1 cup shredded cheddar cheese
1 1/2 cup cubed cooked chicken
1 (10 oz) frozen mixed vegetables, thawed and drained
1 box chicken broth
3 tablespoon cornstarch
water to make a slurry with cornstarch
salt and pepper to taste

Spoon the mashed potatoes into a greased 1 1/2 quart casserole dish, using using the back of a spoon to form a shell on the bottom and sides of dish. In large saucepan add chicken broth, when its boiling add cornstarch, mixed with water, Might need more cornstarch, depends how thick you want the sauce. When thick add chicken and vegetables. Pour into the potato shell. Bake 375º for 30 minutes or untill its bubbly around the edges. Top with cheese, bake another 3 to 5 minutes untill cheese melts.

For non gluten free instead of thickening broth, use 1 (10 oz) can cream of chicken soup. Mix chicken, vegetables and soup in a large bowl.
