6 medium white potatoes
3 tablespoons butter
2 tablespoons flour
3 cups milk
1 teaspoon salt
1/4 teaspoon pepper
1 small onion, sliced and roughly chopped

Directions:
Directions:
Preheat oven to 400º. Butter a large casserole dish.

Pare potatoes, slice thin. Melt butter in medium saucepan, stir in flour. Whisk in milk. Cook over medium heat until thickened, stirring constantly. Set aside.

Put half of potatoes in prepared casserole; cover with half the sauce, seasonings, and onion. Add remaining potatoes, seasonings, and onion, then remaining sauce.

Cover and bake for about 1 hour. Uncover and continue baking until top forms a brown crust.
