15 Shrimp cooked and refrigerated
2 Green Onions
Cilantro to taste (I use at least 1/4 bunch)
1/2 Cucumber, seeded and chopped
3/4 Avocado, chopped
2 Key Limes (use juice of one and slices from the other for “show”)
1/2 Jalapeño, deseeded, more if desired
Calamato, chilled, to cover (I use 1/2 gallon)
Salt and Pepper

Mix and put in margarita glass with shrimp and a Key Lime slice around glass rim.

Cory loves a little Mexican restaurant in Old Mesilla, New Mexico. We all went one day. I am not overly fond of Mexican Food, so I got this dish and hope I have duplicated it. Jim and I have about 15 shrimp each and this makes a light dinner for us.
