2 tablespoons powdered sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup ricotta cheese drained
3/4 cup milk
2 large eggs
2 teaspoons fresh orange zest
1 teaspoon vanilla (can substitute almond extract or Fiori di Sicilia
3/4 cup mini chocolate chips, chopped pistachios or chocolate chip-pistachio mixture
Butter for pan

Directions:
Directions:
Whisk together dry ingredients including flour, sugar, baking powder, cinnamon, and salt in large bowl until well combined. In a separate mixing bowl, whisk together the ricotta cheese, milk, eggs, orange zest, and vanilla until well combined. Make a well in the center of the dry ingredients. Pour wet ingredients into well; whisk until just combined. Stir in chocolate chips, pistachios or chip-pistachio mixture.

Melt butter in nonstick skillet or griddle over medium heat. Spoon about 1/2 cup batter (or 1/4 cup for smaller pancakes). Cook about 2-4 minutes per side or until bubbly on top and golden brown underneath, flip pancakes and cook an additional 2-4 minutes or until golden brown underneath and cooked through. Top pancakes with your favorite toppings.
