Ingredients:  
Ingredients:  
1 eggplant
1 bunch green onions finely chopped
2 cloves garlic crushed
Juice of 2 lemons
4 tomatoes, chopped
1 cup finely chopped parsley
6 Tbspns olive oil

Directions:
Directions:
Peel and slice eggplant in 1/2 inch slices. Salt.
Place on paper towel in glass pie plate.
Cover tightly and microwave high for 3 minutes.
Rinse eggplant, dry and chop fine.
Mix with 4 tomatoes green onions, parsley.

For Dressing: Mix garlic, olive oil and lemon juice together.
