1 TBspn butter
1 tspn minced garlic
2 TBspns tomato paste
1 TBspn red wine vinegar
Salt 1/2 cup chopped onion
1 bay leaf
2 TBspns horseradish
1 cup canned chopped tomatoes

Melt butter, add onion and garlic.
Cook until wilted and add vinegar and bay leaf.
Cook until reduced by half.
Add tomatoes, paste, salt, pepper.
Cook stirring often, 5 minutes stir in horseradish, swirl in remaining butter.
Use this to top Crispy Batter Fried fish.
