Spinach Frittata Recipe

2 TBspns minced onion
1/4 tspn basil or oregano
1/4 cup mozzarella cheese
1 small clove garlic, minced
1/4 tspn nutmeg
4 eggs
A little spaghetti

In skillet, saute onion with garlic for 2 minutes.
Add spinach, stir until moisture evaporates.
Stir in nutmeg, basil or oregano.
In separate bowl, Fork beat eggs with salt and pepper.
Pour over spinach mixture.
Cook covered, over low heat 10-12 minutes without disturbing eggs.
Uncover and sprinkle with mozzarella cheese.
Re-cover, cook 2-3 minutes until cheese melts.
A little spaghetti sauce may be added on top.

Let stand 2 minutes before cutting into wedges.
