1 med onion diced
2 large garlic cloves minced
2 Tbsp butter or olive oil

Chicken rub
1 tsp paprika powder
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp onion powder
3/4 tsp salt
Shake of pepper

5 chicken thighs with bone in and skin off
1 1/2 cups long grain white rice
1 1/2 cups chicken or vegetable broth
1 1/2 cups hot water (tap)

1. Oven 350’F
2. In 9x13 baking dish put onion, garlic and butter.
3. Bake in oven for 12-15 minutes until onion and garlic are golden brown.
4. Mix ingredients for chicken rub together and sprinkle on both sides of chicken pieces.
5. Remove pan from oven and add uncooked rice. Mix with onion- garlic mixture.
6. Top rice with chicken thighs.
7. Add 1 1/2 cups of chicken or vegetable broth and 1 1/2 cups of hot water.
8. Cover with tin foil and bake for 30 minutes.
9. Remove foil and bake another 20 minutes until all liquid is absorbed.

Chicken drumsticks will also work but you don’t need to remove skin as there is very little fat until skin.
