Per John Stark...

Mom always made noodles for beef. So she bought a 1 1/2 rump roast and boiled until tender. Set roast aside.

Crack eggs, (mom only used egg whites, Vinnie used the whole egg - using the whole egg will make the noodles plumper)

Mix in milk, salt and add flour little at a time.

Roll out on a pastry cloth until thin. Let dry 4 to 6 hours. Then you take a kitchen knife and cut into strips
(John remembers mom rolling up the dried noodles and then cutting - unroll for strips)
