4 eggs,slightly beat
1/2 cup sugar
1/4 tsp salt
1 tsp vanilla
1/2 tsp almond
2 cups milk, scalded
1 unbaked 9” pastry shell
Ground nutmeg

Directions:
Directions:
Preheat oven to 400º.

Combine first five ingredients; beat until blended. Gradually stir in scalded milk. Pour into pastry shell. Sprinkle with nutmeg.

Bake for 15 minutes then reduce temperature to 350 and bake 15-20 minutes longer, or until knife inserted in center comes out clean.
Cool to room temperature.
Chill before serving.

*** To prevent soggy crust, Break one of the eggs into the unbaked shell. Swirl it around and then pour it back into the bowl. This keeps the crust crisp.
