5 shredded carrots
4-5 large green peppers chopped
6 oz can of Hunts tomato paste
2-3 28 oz can of whole peeled italian tomatoes with Basil
1 palmful (1/8) cup of Italian seasonings
Heaping TBlspn of pepper
1 cup of oil 4-5 medium sized onions chopped
3/4-1 whole garlic bulb crushed
5-6 20 oz cans of Pastene peeled ground tomatoes
2 palmfuls (1/4 cup) of oregeno
1 1/2 TBlspns of salt
1 Heaping TBlspn of sugar

Directions:
Directions:
Heat oil in large pot, at medium-medium low.
Press garlic into oil, cook until brown.
Add chopped peppers, cook until soft
Add onions, cook for another 5-10 minutes
Add shredded carrots, cook for 3-5 minutes
Add 6 oz can of tomato paste and mix with vegetables
cook for 5-10 minutes
Add 4 can of Pastene tomatoes, then add 2 cans of whole tomatoes.
Depending on size of pot, add more ground peeled and more whole tomatoes.
Heat till bubbling slightly, add all spices.
Once it starts to boil turn down to low to keep at a steady slow boil.
Cook, covered for 2-3 hours.

Can add fresh hot peppers if you like.
A slight modification of an old family favorite, Uncle Joe's Famous Spaghetti Sauce.
