Sweet Potato Casserole Recipe

4 medium sweet potatoes
4 medium peeled diced onions
3 large egss
1 medium diced carrot
1/2 cup water 1/2 tspn curry
1/2 tspn. Salt
1/4 tspn pepper
2 TBspns fresh chopped parsley

Cook and cut potatoes and peel by squeezing pulp out of skin.
Mash in a large bowl.
Puree onions and carrots in cooking liquid and fold into mashed potatoes.
Mix in 3 large eggs and beat until smooth.
Season with 1/2 tspn curry,
1/2 tspn. Salt,
1/4 tspn pepper,
2 TBspns fresh chopped parsley.

Bake in 1 quart covered casserole at 350 for 50 Minutes

Sprinkle with cooked peas when done.
