2 cups butter
1 cup icing sugar
½ cup cornstarch
pinch salt
1 tsp. vanilla
3 cups flour

In a mixing bowl, with an electric mixer, cream the butter and sugar together until the color is pale yellow. Beat in the cornstarch, salt and vanilla. Beat in the flour, 1 cup at a time. Do not overbeat once you have added the flour as it toughens the shortbread. A cookie press works well for short bread however rolling out the chilled dough and using your favourite cookie cutters is an easy alternative. Bake 350ºF oven for 10 - 12 minutes. You want hardly a hint of brown on the edges, if any. Watch carefully. Makes 7 dozen.
