2½ cups flour
1¼ cups butter
¾ cup icing sugar

Lemon topping:
5 eggs
2½ cups sugar
½ cup lemon juice
1 tsp. lemon rind, grated
⅓ cup flour
¼ tsp. baking powder
pinch salt

icing sugar, for dusting

Directions:
Directions:
Combine flour and sugar and cut in butter until the mixture resembles coarse crumbs. Press into 11" x 17" jelly roll pan. Bake 350ºF for 15-20 minutes. Let cool. With electric mixer, beat the eggs, sugar, lemon juice, lemon rind, flour, baking powder and salt. Pour over the crumb crust. Bake 350ºF for 25 minutes. Dust with icing sugar while still hot. Cut into fingers instead of squares.
