¼ cup finely chopped red onion (add to 2 Tablespoons of olive oil and microwave for 2 minutes in a small bowl)
½ cup + 3 Tablespoons Mayo
4 (5-ounce) cans solid white tuna in water
2 hard-cooked eggs, sliced thin
2 celery minced
4 scallions chopped fine
1 teaspoon lemon juice
½ teaspoon sugar
¾ teaspoon Salt and ¾ teaspoon pepper

Directions:

Mix all ingredients in a Large Bowl

Add the red onions to 2 Tablespoons of olive oil and microwave for 2 minutes in a small bowl
Using a strainer, drain and blot tuna on paper towel - Break up in Bowl
Add Mayo, celery, scallions, lemon juice, sugar, salt and pepper, and eggs

Options:
* 2-3 Tablespoons sweet relish or minced bread & butter pickles
* ½ cup fine chopped cornichons, 1 Tablespoon chives, 1 Tablespoon whole grain mustard
* 1 teaspoon curry, ½ cup halved green grapes
* 1 apple chopped in ½ inch peices, ½ cup chopped walnuts, 1 teaspoon minced fresh taragon
* 2 radishes, trimmed, halved, and sliced thin, ¼ cup minced capers, add extra hard egg
