1 cup butter
1 cup brown sugar
1 cup white sugar
4 eggs
4 cups carrots, grated
2 tbsps. lemon rind, grated
2 tbsps. orange rind, grated
2 tbsps. lemon juice
2 tbsps. orange juice
2 oz. rum
3 cups flour
2 tsps. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. ground nutmeg
½ tsp. allspice
½ tsp. cloves
½ tsp. salt
1 cup raisins, chopped
1 cup pecans, chopped

Directions:
Directions:
In a large bowl with electric mixer, cream together butter, sugars, eggs, carrots, rind, juices and rum. Combine the dry ingredients and beat into the creamed mixture. Stir in the raisins and pecans. Pour the batter into a greased, parchment paper lined 11" x 15" x 3" pan or round 12" x 4" pan. Bake 350ºF for 1 hour. Check with a cake tester before removing from oven. Cool cake before icing.
