3 large chicken breasts - boneless, cooked and shredded
1 cup fine chopped celery
cup fine diced scallions ( about 3 -4 scallions)
cup fine chopped red onions (Add red onions to 2 Tablespoons of olive oil in small bowl for 2 minutes)
cup chopped pecans
cup chopped Bread & Butter Pickles
2 Tablespoons fine chopped parsley
3 hard boiled eggs (sliced)
4 oz jar diced pimentos, drained, or cup dill pickle relish
2-3 dashes of Cayenne
1 teaspoons salt
1 teaspoons pepper
cup Mayo

Adjust seasoning to taste
Chill before serving
