1 (18 ounce) package refrigerated sugar cookie dough, softened
1 (8 ounce) package cream cheese, softened
1/2 cup packed brown sugar
1/4 cup creamy peanut butter
1/2 tsp vanilla
2 medium apples
ground cinnamon
1/4 cup caramel ice cream topping, warmed
1/2 cup peanuts, chopped

1. Preheat oven to 350º. For crust, shape cookie dough into ball. Place dough in center of large baking stone; flatten softly with palm of hand. Using lightly floured roller, roll out dough to a 14 -inch circle, about 1/4 -inch thick. Bake 16 to 18 minutes or until light golden brown; cool 10 minutes. Using a serrated knife, carefully loosen cookie from stone.

2. For topping, combine cream cheese, peanut butter, brown sugar, and vanilla; mix well. Spread mixture evenly over top of cookie. Peel, core and slice apples. Arrange apples evenly over cream cheese mixture; sprinkle with cinnamon. Heat caramel topping in microwave until warm; drizzle over apples. Chop peanuts and sprinkle over apples. Cut into 16 wedges.

Yield: 16 servings
