2 pounds dried black beans, soaked overnight
32 ounces Chicken broth
8 large carrots, cut into 1 inch pieces
1 medium onion, chopped
1 red pepper, chopped
1 yellow pepper, chopped
1 orange pepper, chopped
2 1/2 pounds ham steak, cut into 1 inch pieces
sour cream
red wine vinegar

Directions:
Directions:
Soak beans overnight, rinsing them several times. Place beans in 7-8 quart pot. Add chicken broth and water to 2 inches above beans. (you can also add water while cooking, if needed). Simmer for several hours until beans are soft. Add carrots and cook another hour. Add onions, peppers. Cook another hour. Add ham and cook lanother hour. (we cooked the soup a total of 7 hours- its worth it!) Serve with spashes of red wine vinegar and a dollop of sour cream. Can also be served over rice.
