16 ounce dried split peas
1 1/2 pounds meaty ham bone
3 carrots, diced
1 tbsp dried minced onion
1 tsp dried thyme
1 tbsp shallots, scallions, leek mix
3 stalks celery, diced
1/2 tsp black pepper
3 cups water
4 tbsp chicken better than bouillon
4 cups boiling water

Directions:
Directions:
Rinse peas. Add to crock pot and add 3 cups water and soak overnight. DO NOT DRAIN. add rest of ingredients and cover and cook on low for 6-8 hours. Remove ham bone and shred meat from bone.
discard bone.
