4 c. mashed sweet potatoes
2-3 c. sugar (preference)
2 st. butter
1 Tbsp. vanilla
2-3 shakes nutmeg, to taste
3-4 shakes cinnamon, to taste
3 lg. eggs
2 deep dish pie crusts (or 3 regular)

Directions:
Directions:
Peel & cut up potatoes. Cover with water & boil until tender; drain. Mix potatoes, sugar, butter, vanilla, nutmeg & cinnamon. Taste o see if more sugar or spices are needed. Add eggs; mix well. Pour into unbaked pie crusts. Bake at 300º for a while; increase to 350º and bake until set.
