1 ¼ c. graham cracker crumbs
1 ¼ c. powdered Stevia
¼ c. butter, melted

5 (8 oz.) pkg. cream cheese, softened
2 c. powdered Stevia
3 Tbsp. flour
5 lg. eggs
2 egg yolks
1 ½ tsp. vanilla
¼ c. heavy cream

2 c. sliced strawberries--or--1 can strawberry or cherry pie filling

CRUST: Mix cracker crumbs, 1 ¼ c. Stevia & butter together; press into a 10" springform pan.

FILLING: Beat cream cheese, 2 c. Stevia & flour in a medium bowl until well blended & smooth. Add eggs & egg yolks; beat until smooth. Add vanilla, scraping sides of bowl. Mix briefly & add heavy cream; until well blended. Pour filling over crust. Bake at 475º for 10 minutes. Reduce to 200º and bake for 1 hour. Turn oven off and leave cheesecake in oven for 1 more hour.

Cheesecake will be slightly firm to the touch. Let cool 15-20 minutes before placing in the refrigerator. Refrigerate a minimum of 4-6 hours or preferably overnight before serving.

TOPPING: Top with strawberries or pie filling just before serving. Store any leftovers in refrigerator.
