3 large eggs (⅔ c.)
1 c. sugar
5 Tbsp water
1 tsp vanilla
1 c. sifted cake flour
1 tsp baking powder
¼ tsp salt

Directions:
Grease and flour a 15 ½ x 10 ½ inch pan. Pre-heat oven to 375 degrees. Beat eggs with rotary beater until thick. Gradually beat in sugar. Beat in all at once - water & vanilla. Sift together and beat in all at once - cake flour, baking powder & salt. Beat until smooth. Pour into pan. Bake just until cake tests done; 12-15 minutes. Loosen edges and immediately turn upside down on a towel sprinkled with powdered sugar. Spread cake at once with jelly and roll up; wrap in towel until cool. If you want to spread roll with a filling (lemon, vanilla, or chocolate) in place of jelly, just roll the sugared towel right in the roll and let stand for ½ hour. Then unroll carefully and spread with cold pudding, reroll, wrap in wax paper, and refrigerate.
