½ cup butter or margarine
2 cups graham cracker crumbs
¼ cup granulated sugar
1½ cups icing sugar
½ cup butter
2 eggs
19oz. pineapple, crushed
1 cup whipping cream

Directions:
Directions:
Melt butter, stir in crumbs and sugar. Reserve 1 cup for topping. Press remaining crumbs into ungreased 9" x 13" pan. Bake in 350ºF oven for 10 minutes. Cool. Beat icing sugar and butter together well. Add eggs one at a time, beating until smooth. Spread over crumb layer. Whip cream until stiff, fold in pineapple and spread over top. Sprinkle with reserved crumbs.

Strawberry Delight: Omit pineapple. Drain juice from 15oz. frozen sliced strawberries. Stir in 1 tbsp. cornstarch. Heat and stir until boiling and thickened. Cool. Stir in berries and use in place of pineapple. Makes 15 pieces.
