Pineapple Delight Recipe

cup butter or margarine
2 cups graham cracker crumbs
cup granulated sugar

1 cups icing sugar
cup butter
2 eggs
19oz. pineapple, crushed
1 cup whipping cream

Crust: Melt butter in saucepan over medium heat. Stir in crumbs and sugar. Reserve 1 cup for topping. Press remaining crumbs into ungreased 9" x 13" pan. Bake in 350F oven for 10 minutes. Cool.
Filling: Beat icing sugar and butter together well. Add eggs one at a time, beating until smooth. Spread over crumb layer. Scatter pineapple over top. Whip cream until stiff. Spread over pineapple. Pineapple may be folded into cream, if desired before spreading. Sprinkle with reserved crumbs.

Strawberry Delight: Omit pineapple. Drain juice from 15oz. frozen sliced strawberries. Stir in 1 tbsp. cornstarch. Heat and stir until boiling and thickened. Cool. Stir in berries and use in place of pineapple. Makes 15 pieces.
