2 pkg (6 oz) fideos or 12 oz spaghetti
3 c ricotta or cottage cheese
1/2 c grated Parmesan cheese
1/4 lb thinly sliced prosciutto ham, chopped
1 1/2 c milk
1 c light cream
4 eggs
1 1/2 tsp salt
1/4 tsp pepper
1/4 c grated Parmesan cheese

Directions:
Cook fideos as directed on package. If using spaghetti, break strands in half before cooking. Rinse cooked fideos with cold water. In a greased 2 1/2 qt casserole arrange layers of cooked fideos, ricotta, Parmesan, and prosciutto, ending with fideos. Beat milk, cream, eggs, salt, and pepper and pour over fideos. Sprinkle with Parmesan cheese. Cover loosely. Bake in preheated moderate oven (350) for 45 min to 1 hr, or until casserole is lightly browned and firm. Garnish, if desired, with additional chopped prosciutto and finely chopped parsley.
